Introduction To Food Service

Introduction to Food Service: CIP: 120503 (grade 9-10)
This course is grade 9 and 10 students

Course One
Introduction to Commercial Foods
The purpose of this section is to introduce basic cooking skills. The students will learn about tools, equipment, and cooking methods. They will make soups, sauces, salads and dressings, sandwiches, vegetables and basic hot entrees. These foods are used to feed the student population breakfast and lunch.

Course Two:
Introduction to Pastry and Baking
The purpose of this section is to introduce basic baking skills to the students. They will learn how to make basic yeast dough, quick breads, cookies, cakes and frostings. They will them apply these basic skills in preparing more advanced pastries. The products prepared in this section are also used in our breakfast and lunch programs.

Course Three
Introduction to Table service and Customer Service
The students learn basic table setting, taking orders, serving guests, how to deal with complaints and problems and handling customers with special needs.

The students complete off the year with resumé preparation, interviewing skills and basic job etiquette skills. Throughout the first and second year, students engage in applied mathematic
